Magical Blender Muffins - Recipe

I love the convenience of breakfast muffins, and I especially love that these are full of great ingredients and absolutely no filler! See the original recipe here - of course I altered it for my own use.

Servings - 12 regular sized muffins

  • 2 cups organice rolled oats
  • 2 ripe organic bananas
  • 2 brown organic eggs
  • 1 cup non-fat organic Greek yogurt
  • 3 tablespoons organic honey
  • 1-1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon vanilla extract
  • dash of organic sea salt

Topping Suggestions
  • cinnamon and apple chunks
  • strawberries and blueberries
  • chocolate chips and almonds
  • strawberries and chocolate chips
  • unsweetened coconut

  1. Preheat oven to 400°. 
  2. Place 12 pieces of parchment paper or muffin-cup liners in muffin cups, or spray tin with cooking spray.
  3. Mix all ingredients in a large bowl (whisk egg and crush banana to start).
  4. Divide batter evenly among prepared muffin cups.
  5. Sprinkle with toppings of your choice.
  6. Bake at 400° for 17 minutes or until a toothpick inserted in center comes out clean.
  7. Cool muffins in pan 5 minutes. 
  8. Remove from pan; cool completely on a wire rack.
